Ingredients
1 large onion1/3 c. green pepper2 stalks celery1/4 scallions1 tsp olive oil1/2 c carrot1 c button mushrooms1 c zucchini1 c spinach1/2 corn1/4 peas1/2 c rice1 quart mushroom Broth1 can diced tomato1 sprig rosemary
Directions
Brown first four ingredients in 1 tsp olive oil Add broth and rest of ingredients. Season to taste.
