Farina Cereal, 1.5 cup Yogurt, plain, low fat, .25 cup *Whole Wheat Flour, 0.25 cup Water, tap, 1.5 cup *Hot Green Chili Peppers, 3 peppers chopped fine for spicy or halved and picked for mild flavor.Onions, raw, .25 cup, sliced fine.Peas, frozen, 0.5 cup Coconut, raw, .5 cup, shredded Ginger Root, 1 tsp shredded fineFresh cilantro, chopped
Mix everything together to form a batter. Let sit for 10 minutes. On a hot non-stick pan on medium flame, spray olive oil or Pam, pour one ladle of full of batter and spread to form a thin pancake. Cover and cook for 2 minutes on medium flame. Spray with Pam or Olive oil on the pancake and turn over and brown for 3 minutes or so unitl golden and crispy on both sides, without the cover. Serve warm with fat free sour cream for dipping (instead of whipped butter).
This pancake can be prepared for breakfast without the peas or onions. It can also be prepared for brunch with mixed veggies or fresh chopped cabbage. Serves 3 with 3 pancakes each.
