SCD black-eyed pea stirfry

Ingredients
1 tsp coconut oil1/2 medium onion2 cloves garlic2 stalks celery1 medium carrotHandful mushrooms2 stalks swiss chard1/2 cup red wine1 cup cooked black-eyed peas
Directions
Melt coconut oil in a large skillet (I use cast-iron). Chop all the veggies and saute until tender. Deglaze with wine. Add peas and cook until heated through. I eat this by myself ;-), so I guess it is one serving!
