1 cup Splenda1/4 cup egg beater1/3 cup water2/3 tsp baking soda2/3 tsp baking powder1/4 cup white flour1/4 cup oatmeal3/4 cup whole wheat flour1/3 tsp salt1/2 tsp cinnamon1/3 tsp allspice1 cup pumpkin puree1/3 cup chopped walnuts1/3 cup craisins1/3 cup raisins1/3 cup applesauce
1. Preheat oven to 350 degrees F. Spray 7x3 inch loaf pan
2. Mix applesauce, splenda, and egg beater together in large bowl. Mix in pumpkin puree and water.
3. Stir together flours, oatmeal, baking soda and powder, salt, and spices in separate bowl.
4. Add flour mixture to pumpkin mixture. Mix until just combined. Fold in nuts, craisins, and raisins. Pour batter into prepared pan.
5. Bake approximately 1 hour or until toothpick comes out clean. Cool on wire racks.
