Salmon Patties

Ingredients
5 medium (500g) potatoes440g salmon (fresh or canned)1 stick celery, finely chopped1 small onion, grated1 small red pepper, finely chopped1 tbs parsley (chopped fresh or dried)1 tsp grated lemon rind1 tbs lemon juice½ cup plain flour, approx1 egg, lightly beaten2 tbs milk2 cups breadcrumbsoil for frying
Directions
1. Boil, steam or microwave potatoes until tender, drain well, place in medium bown, mash with fork or potato masher until smooth. Drain salmon (if canned), remove skin and bones, ad to bown, mash with fork, add celery, onion, pepper, parsley and lemon rind and juice, mix well with fork. Cover, refrigerate for 30 minutes to make mixture easier to handle.

2. Divide salmon mixutre evenly into 8 portions, a simple way is to divide mixture into 8 wedges. Shape each portion into patty, dust with flour, shake away excess flour. Brush patties with combined egg and milk, toss in combined breadcrumbs, reshape if necessary while patting on the breadcrumbs.

3. Place patties into frying basket leaving about 1cm between patty. Lower gently into hot oil, deep-fry for about 2 minutes or until golden brown. Drain on absorbent paper. Serve with a green salad and lemon wedges to sqeeze over patties.
