Wild mushroom and leek soup

* Mushrooms, fresh, 300 grams * Garlic, 3 cloves * 1 Leeks * Parsley, 3 sprigs diced * Beef broth, bouillon, consomme (use beef extract, no msg) * Olive Oil, 2 1tsp
In a warm pan add olive oil and saute garlic and leeks until the turns translucent yellow (about 1-2 minutes). Add mushrooms and cook for another minute. Finally add chopped Italian flat parsley and beef broth (750 ml or 3 cups). Bring to boil within about 2-3 minutes. Serve.
I prefer to season with fresh cracked pepper upon serving. A freshly grated sprinkling of Parmesan adds a nice flavor if desired.
