Double Delicious protein-packed Grilled Cheese

Bean Dip:1 cup canned white beans, drained and rinsed1/4 cup part-skim ricotta cheese, or low-fat cottage cheese (cottage cheese for this calculation)2 tsp lemon juice1 tsp olive oil1/2 clove garlic, roughly chopped1/4 tsp salt1/8 tsp pepperSandwich:4 slices whole wheat bread8 tbsp bean dip8 tbsp part-skim shredded mozzarella cheese
For the dip:
Place all bean dip ingredients in mini food processor and blend until smooth and creamy.
For the sandwich:
Lightly toast bread.
Spread 2 tbsp dip on each slice
Top with cheese.
Place in toaster oven, or under broiler, and toast until cheese is melted and bubbly.
Store remaining dip for up to 1 week in fridge.
Makes 4 sandwiches, and you should have 2 servings of dip leftover.
