Less-Evil Deviled Eggs

* 8 eggs * 6 Tbsp non-fat Greek yogurt (such as: Fage 0%) * 2 tsp Dijon mustard * 1/2 onion, finely diced * 1/4 tsp hot sauce (such as: Tabasco) * Salt and pepper to taste * Paprika for garnish
1. Place eggs in large saucepan and fill with cold water just until eggs are covered. Bring to a boil. Once boil has been reached turn off heat and allow eggs to sit for 10 minutes in the hot water. After 10 minutes, drain and run under cold water. Refrigerate for 30 minutes or place in ice bath to cool.
2. Once cool, shell the eggs and cut in half lengthwise. Remove yolks and place in a bowl. Add yogurt, Dijon, onion, hot sauce, salt and pepper to yolks and mix well to combine.
3. Place a dollop of the filling back into the eggs or use a pastry bag fitted with a 806-809 star tip to pipe the filling into the eggs. Dust with paprika. Keep refrigerated until ready to serve.
