Low Carb Cauliflower PepperJack Soup

2 tbsp olive oil, 1 cup finely chopped onion, 4 cups cauliflower cut into small florets, 2 cups of chicken broth - or you may substitute vegetable broth, 1 cup half and half - or cream, 2 cups of water, 2 tbsp butter, 1 tbsp flour, 8 oz pepperjack cheese shredded, 1 tsp oregano, 1/2 tsp thyme, 1/4 tsp nutmeg, salt and pepper to taste.
Add oil to stock pot and heat. Add Onions and cook to transparency - 5 minutes. Add broth and cauliflower, lower heat to medium and cover. Cook until tender about 8 minutes. Meanwhile whisk cream and water, set aside. Melt butter in a separate pot and gradually stir in flour. Gradually stir in cream/water mixture and continue to stir until thickened. Reduce heat and add cheese, herbs, spices. Stir until melted. Pour cheese mixture into cauliflower stockpot, reduce heat and simmer for 20 minutes. Make sure not to boil.
