Buffalo Chicken Wing Casserole

Ingredients
12 oz of cooked chicken - I used a rotisserie chicken breast, no skin3 small celery stalks minced 3 med. carrots minced1 tbsp. of minced garlic2 oz of Philadelphia fat free cream cheese2 cups of cooked whole wheat penne pasta1 tbsp of margarine or butter3/4 cup of fat free cheddar cheese4 oz of lite shredded mozzarella cheese1/2 cup of Franks Hot Sauce1 cup of non-fat milk
Directions
Preheat oven to 350

Cook 2 cups of pasta according to directions. Set a side when done.

In a bowl, mix chicken,cream cheese and hot sauce. Set a side.

In a frying pan, mixed together celery, garlic and carrots, until tender. About 4 minutes. Add to your bowl of chicken. Mix together.

In a large pot, bring milk and butter to a simmer. Add 1/2 cup of cheddar cheese and 3 oz of mozzarella. Wisk together until melted, about 4 minutes. If it is not a completely melted, thats ok. Add your chicken mixture and pasta, give a good stir till well mixed.

In a casserole dish, spray with cooking spray, add your mixture and top with remaining cheddar and mozzarella cheese.

bake in the oven for 30 minutes.

Optional: Top with a lit blue cheese dressing.
