Beefy Mushroom Rice Soup

Ingredients
1/2 cup cooked Rice Select 1 1.5 oz can Sawnaon Lower Sodium Beef Broth1/4 cup water1 cup sliced mushroom2 Tbsp. chopped onion2 squirts of olive oil spray
Directions
Spray saucepan with 1 squirt olive oil spray. Add chopped onion and sliced mushrooms. Spray top of veggies with a second squirt. Cover pan and cook low until tender, maybe 10 minutes. If it starts to dry before tender, add a couple of Tbsp. of the beef broth. Add cooked rice and beef broth. Do not cover again. Bring to a boil and remove from heat. Serves 2, about 1 1/4 cup each.
