1 cup brown or green lentils1/2 cup brown rice2 cups water2 medium yellow onions (aprox 1 lb)1/4 cup olive oil
chop onions and carmelize in olive oil over low heat until almost blackened. This can take up to 1 hour.
cook lentils separately for 20 minutes. Drain and set aside.
When onions are done, mix rice with onions. Add lentils and water. Bring to a boil and then reduce heat to a simmer. Cook until all liquid has been absorbed, aprox 40 minutes.
Serve topped with balkan yogurt and banana hot peppers (optional).
