Sausage and kale soup

Ingredients
6 cups chicken broth (homemade or low-sodium store-bought)2 cups frozen hash brown potatoes, southern style (diced) uncooked1 can cannellini beans1 package turkey sausage (smoked sausage or breakfast links will work, but smoked is closer to the traditional flavor), cut into thin slices3 cups finely chopped kale, stems removedsalt and pepper (optional)
Directions
1. Heat broth to low boil over medium high heat. Add potatoes and cook until they are soft.
2. Meanwhile brown sausage in skillet according to package directions, drain, if needed
3. Remove 1/4 of the potatoes and a little broth. Either mash potatoes in a bowl with potato masher, or blend in food processor/blender. Return to soup and stir.
4. Add beans and about half of the liquid from the can to the soup. Stir.
5. Add sausage to soup. Simmer 10 minutes over medium low heat
6. Add chopped kale. Simmer 10 minutes more.
7. Add salt & pepper to taste

Makes 8 1-cup servings
