Spicy Chicken & Spinach Soup

2 tbs. virgin olive oil2 large white onions, thinly sliced1 ½ lbs skinless boneless chicken, diced2 large carrot, finely shredded2 large mince garlic cloves1 jalapeno pepper, minced2 tbs. minced fresh thyme or oregano8 cups fat-free chicken broth1 can black beans, drained & rinsed6 cups fresh spinach1 can stewed tomatoesSalt & pepper to taste
Heat oil in a large stockpot over medium heat.
Add onions, stirring occasionally, for 10 minutes.
Add chicken, stirring occasionally for 5 minutes or until chicken is cooked through and onions are slightly brown.
Add carrot, jalapeño and thyme; cook another two minutes.
Stir in broth and increase height to high. Bring to a boil.
Add beans, spinach and tomato. Bring back to boil.
Turn off heat and add salt & pepper.
Sprinkle with parmesan cheese, if desired.
Makes 10 - 1 cup servings
