1/4 cup Hodgson Mill Milled Flax Seed3/4 cup Hodgson Mill Whole Wheat Flour3/4 cup white flour1/2 cup Splenda2 teaspoon baking powder1/2 teaspoon baking soda1/4 cup Egg Beaters1 1/2 cup finely chopped apples (peeled and cored)1 tablespoon extra light olive oil1/2 cup Silk Light Soy Milk, plain1/2 cup chopped walnuts2 tablespoons unsweeted applesauce
Preheat oven to 400 degrees F. Spray 12 hole muffin pan. Blend dry ingredients together in a bowl. In a separate bowl, combine egg, olive oil, applesauce, and soy milk. Add dry ingredients to egg mixture and stir until just blended. Fold in apples and nuts. Batter will be thick. Fill well-greased muffin cups 2/3 full. Bake 400 degres 18 - 20 minutes or until top springs back when touched. Yield - 12 muffins
