Crockpot Potato Soup

Ingredients
Directions
3 medium carrots - diced3 Medium Celery Stalks - diced1/4 cup of onion - Diced4 Medium Rustic Potatoes - Diced4 Cups of low sodium chicken brothdillparsleypepper
Add all your ingreidents in the crockpot, EXCEPT the Evaporated Milk.
Cook on high for 4 hours or low 6-8 hours
1 hour before soup is done, pour in your evaporated milk.. Cook for one more hour.
If you like your soup more blended use a mash potato masher or a hand blender.
Optional:
Top with some bacon bits, fat free cheddar and a dollop of greek yogurt
