Nutty Bean Loaf

Ingredients
2 tbs olive oil1 large onion, finely chopped2 cups mashed, cooked beans (pinto, pea, kidney, mixed)1 cup finely chopped nuts (walnuts, pecans, cashews)2 cups whole wheat bread crumbs2 eggs, lightly beaten1 1/4 cup 1% milk1 tsp dried sage1/2 tsp salt1/4 tsp ground pepper1/4 cup chopped parsley1/3 cup chopped celeryBarbeque sauce, optional topping
Directions
Heat oil in skillet & saute onion & celery until tender but not browned. Combine with remaining ingredients except BBQ sauce. Pack into lightly oiled loaf pan and bake in 350* oven for 45 minutes. Let cool slightly, slice, and serve with BBQ sauce.
