Lap-band Friendly: Sunomono - Japanese Cucumber Salad

Ingredients
1 Large Cucumber - peeled and sliced; seeds removed1 teaspoon of salt2 Tablespoons of Cider Vinegar1 Tablespoon of Truvia or Stevia1 Tsp. of Soy Sauce or Bragg's Amino Acids
Directions
Peel cucumber and slice in half lengthwise

Scoop seeds out with a spoon and then slice each half using a mandoline or knife

Sprinkle sliced cucumber with salt and let stand for 5 minutes

Squeeze out excess moisture.

Combine vinegar, sugar and soy in bowl and mix well.

Pour Vinegar mixture over the cucumber slices and toss.
