Split Peas Soup

carrots, celery, onion, water, split peas, diced ham, ham hock
1. Rinse and pick through peas. 2.In a large sauce pan bring peas and water to a boil. 3 Once the peas are boiling turn heat off and cover. Let stand for 1 1/2 hrs. 4. While you are waiting on the peas, chop the carrots, celery, and onion. 5. When time is up add all the remaining ingredients to the pot and bring to boil. 6. Once soup is boiling turn heat down and let simmer for about an hour. 7. Remove ham hocks and get off as much meat as you can, chop into bit size pieces and add meat to soup. 8. Let soup simmer for about another 20-30 minutes.
