Ingredients

    350g/12oz lean pork fillet
    1 tbsp veg/olive oil
    1 medium onion chopped
    2 garlic cloves crushed
    25g/1oz plain flour
    2tbsp tomato puree
    425ml/15fl oz chicken/veg stock
    125g/4.5oz mushrooms sliced
    1 large green pepper (bell) deseeded and chopped
    salt and pepper
    0.5 tsp freshly grated nutmeg
    4tbsp low fat natural yogurt

Directions

Trim and cut pork into 1/2 inch thick slices.

Heat oil in a large pan and fry pork, onion and garlic for 4-5 minutes or until lightly browned

Stir in flour and tomato puree then pour in stock and stir to mix.

Add mushrooms, salt and pepper to taste, and nutmeg.

Bring to boil, cover and simmer for 20 minutes or until pork is tender/cooked through.

Remove pan from the heast and stir in the yogurt.

Serve with white boiled rice with fresh parsley or potatoes

    This is very good!!!!! The men of the house loved the sauce but the only downfall I had was the choice of the Whole Wheat Egg noodle. I will definitely make again but with either a regular egg noodle or brown rice. - 9/24/07

    Incredible!
    Excellent dish... I made it with Brown rice, the juices really helped with the flavor. I used red peppers instead of green, i think they have a better taste. The recipe doesnt' notate it, but I added the peppers at the same time of the mushrooms... They need to cook down for about 20 minutes...! - 9/25/07
