Ingredients
Ingredients: * Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, without salt, 4 Cup * Bacon, 1 unit, cooked (yield from 1 lb raw * Onions, raw, 1 medium * Garlic, 6 cloves * Celery, raw, 6 stalk, medium * Ham, regular 2 cup, diced * *Champagne, Brut, Andre, 4 oz * Water, tap, 6 cup * Olive Oil, 2 tbsp * Bay Leaf, 1 tbsp, crumbled * Thyme, ground, 1 tsp * Basil, 2 tbsp
Directions
Serves 12.

Soak peas over night, drain. Add to crock pot. Pour leftover champagne over peas. Add diced ham, and bacon cut into bite sized pieces. In a medium skillet, saute onion, garlic and celery until soft. Add to pea mixture. Add water, liquid smoke, thyme, bay leaves and other herbs as desired. Cook on high for 5-6 hours or until peas are done.
