Hoppin' John Salad

Ingredients
* Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, without salt, 2 CupWhite Rice, long grain, 1.5 cup * Green Onions, .5 cup, chopped * Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) * Parsley, 2 tbsp * *Lemon Juice, .25 cup * Olive Oil, 1 tbsp * Salt, .25 tsp * Garlic, 2 cloves
Directions
Combine black-eyed peas, rice, green onions, celery, tomato, and parsley in a mixing bowl. In a small bowl, mix together lemon juice, oil, salt, and garlic and pour over the salad. Toss gently. Chill 1 to 2 hours if time permits.
