Buffalo Chicken with Blue Cheese Twice Baked Potatoes

Ingredients
4 medium baking potatoes1/4 cup 2% milk1/4 tsp salt1/8 tsp pepper1/2 cup blue cheese crumbles3 medium scallions, chopped1 lb chicken breast, cut into bite sized pieces2 cloves garlic, chopped1/4 tsp salt1/8 tsp pepper1/4 cup hot sauce
Directions
Bake the potatoes at 400 until tender.
Allow to cool enough to be able to handle.
Cut each potato in half and scoop out the inside being careful to leave the shell intact.
Mash the potatoes
Mix the milk, salt, pepper, scallions, and blue cheese crumbles with the mashed potatoes.
Return the mashed potato mixture evenly to the 8 halves of potatoes.
Bake at 400 for about 5 minutes or until the cheese melts and the top crisps slightly.
Meanwhile, in a large nonstick skillet cook the chicken breast with the salt, pepper, and garlic until the chicken is cooked through.
Remove from the heat, add the hot sauce, and mix to coat.
To serve place two twiced baked potato halves on a plate and top with 1/4 of the buffalo chicken mixture.
If desired top with a dollop of sour cream and serve with carrot and celery sticks (not in nutritional information).

    I tried this last night, and it was pretty good. I'm not used to the blue cheese taste, and my 13 yr old daughter wasn't really crazy about that part of it either, but I would make it again. I ate it with a side of asparagus and was very full and satisfied afterwards. - 2/18/10
