Blue Corn Tacos

Ingredients
Ancient grains Nature's Earthly Choice Heritage Grain Blend, 1 cup cooked (1/4 cup dry)Pinto beans, 1 cup cookedRoasted peppers, red, yellow, orange, 1/2 cup sliced into thin stripsbaby field greensBlue corn taco shells, 2 per serving (4 total)
Directions
Spray saute pan with canola or olive oil cooking spray
Heat to medium heat.
Add grains and beans.
Stir in salsa.
Stir slowly until heated through.
Stir in peppers.
Serve with blue corn taco shells and baby field greens.
Put greens in shell and top with filling.
Serve with Modelo Negra beer or a robust dry red wine.
