2 large yams2 eggs1 tsp cinnamon1 tsp nutmeg1/2 tsp ginger1 tsp allspice3/4 cup sugar1 tbsp flour1 3/4 cup evaporated milkAfter yams are cooked and peeled, in a large bowl place all ingredients together and mix with electric mixer until smooth.Pour in crust.Crust Ingredients1 1/4 cup flour1/4 tsp salt 1/3 cup shorteningwater
Directions
bake Yams in foil rubbed with olive oil for 1 - 1 1/2 hrs.

Bake pie with foil covered around crust for 1 20 min

remove foil and cook 25 more min
