Roasted Garlic Hummus

Ingredients
1 garlic bulb1 (15-oz) can garbanzo beans, rinsed and drained (with 1 tbsp canning liquid reserved)2 tbsp olive oil, dividedjuice of 1 lemon1/2 tbsp parsley1 tsp salt1/4 tsp black pepper
Directions
Preheat oven to 350 degrees. Cut top off garlic. Drizzle with 1 tbsp of olive oil. Wrap garlic in aluminum foil, place in small baking dish, and bake for 45 minutes or until garlic soft and fragrant.

After garlic cools, place roasted garlic cloves in food processor with chickpeas, 1 tbsp canning liquid, and remaining ingredients. Puree until smooth, adding additional olive oil as needed to make hummus smooth.
