Vegetarian Chili

Ingredients
1 medium zucchini, halved lengthwise, cut into 1/2 inch pieces3/4c chopped green pepper (1 medium)1/2 c chopped onion (1 medium)1/2 c thinly sliced celery (1 stalk)2-3 tsp chili powder1 tsp dried oregano crushed1/2 tsp ground cumin2 14.5 oz cans diced tomatoes, undrained1 15 oz can black beans, rinsed and drained1 10 oz package of frozen corn1 c salsa
Directions
In slow cooker, combine first seven ingredients. Stir in remaining ingredients. Cook on low for 8-10 hours or on high for 4-5 hours. Serve with cheese and/or sour cream. Makes 6 servings.
