Portobello Mushrooms w/Spinach & Feta Cheese

Ingredients

1 large portobello mushroom (stems removed and chopped)1 clove of garlic, minced1/4 cup of diced onion1-1/2 cups of fresh spinach1-1/2 tbsp of olive oil1 tbsp of balsamic vinegar2 oz. crumbled feta cheese
Place mushroom on a greased cookie sheet top down
Drizzle 1/2 tbsp olive oil and 1/2 tbsp balsamic vinegar
Place in 350 degree oven for 10 minutes
While the mushroom tops are cooking, saute the onions, garlic and chopped stems in a tbsp of olive oil.
Add spinach and toss over heat until coated with onion/garlic mixture being careful not to overcook the spinach. Add salt and pepper to taste.
Remove mushroom tops from oven, place spinach mixture on top and return to the oven for 10 minutes.
Sprinkle with feta cheese and serve.
