Spanish Omelet

Ingredients
4 slices bacon2 lg. potatos, cubed1 c. onion, diced2 whole eggs4 egg whites 4 tbsp sour cream1 c. salsayou could add bell peppers, jalapenos, cheese, sausage, what every your heart desires.
Directions
Cook bacon until desired doneness. Pour out half of the grease and add potatoes and onions into the remaining grease, and cook on med-high heat until potatoes are browned on all sides about 15-20 minutes. Meanwhile place eggs in a blender or kitchenaid with whisk attachment and whip for 3-4 minutes. Split the eggs into four servings and one by one place each serving of eggs into a skillet and cook over medium heat until done, flipping once. Fill with potatoes and serve with sour cream and salsa.
