Quinoa Tabboleh Salad

Ingredients
1 cup uncooked quinoa1 bunch flat leaf parsley, chopped2 TB mint, fresh, chopped1/2 kirby cucumber, chopped, about 1/2 cup1/2 cup tomatoes, chopped1/4 cup red onion, chopped2 lemons, zested and juiced2 garlic cloves, pressed
Directions
Cook quinoa according to package directions, fluff and set aside.

Add all chopped vegetables to cooled quinoa.

Whisk together lemon juice and zest, olive oil, garlic, salt and pepper. Pour over quinoa mixture. Refrigerate 1 hr beofre serving.
