My Favorite Spinach

Ingredients
1 t olive oil1 large sweet onion1 pkg sliced mushrooms1 10 - 16 oz pkg frozen chopped spinach1/2 t ground nutmeg1 T grated parmesan
Directions
Defrost spinach in microwave, then squeeze out as much liquid from the spinach as possible. Set spinach aside. Chop onion, then saute in pan with olive oil over medium high heat for about 5 minutes. Add sliced mushrooms and saute for 5-10 more minutes until onions and mushrooms are soft. Add in spinach and nutmeg and stir until they are combined with the onions and mushrooms. Transfer to a serving dish and sprinkle with parmesan. Enjoy :)
