4 cups vegetable stock36 oz low sodium v8 juice3 boiled potatoes, cubed (medium)1 medium onion minced2 cups rough chopped cabbage10 oz package mixed vegetables1 can diced tomatoes in liquid1 Tbsp Worcestershire sauce (leave out for vegan version)3/4 cup pearled barley (uncooked)2 tsp kitchen bouquet browning liquid
Combine all and simmer for one hour or soup until reaches the desired consistency Makes 6-8 1.5 cup servings
