Jeanine's (very) YUMMY Thai Linguini

Ingredients
Linguini (0.5 cup)Healthy Choice Pasta Sauce (0.25 cup)Low-fat/low-sodium Chicken Broth (0.25 cup)Rice Vinegar (0.5 tbsp)Ginger Root (1.5 tsp)Olive Oil (1 tsp)Minced garlic (0.5 clove)Crushed red pepper flakes (0.5 tsp)Carrots (0.5 cups chopped)Zucchini (0.5 cups chopped)Red peppers (0.5 cups chopped)Jumbo shrimp (5 oz cooked)Onions (0.25 cups)
Directions
Makes ONE SERVING ONLY (just add double the ingredients for two people etc..)

Prepare linguini according to pkg. directions. Drain well and keep warm (0.5 cup).

In a small bowl combine Healthy Choice pasta sauce (non fat /low sodium) 0.25 cup, chicken broth (low fat/ low sodium) 0.25 cup, 0.5 tbsp vinegar, 1.5 tsp crushed ginger root, 1 tsp olive oil, 0.5 clove garlic (minced), and 0.25 tsp crushed red pepper flakes. Set aside.

Spray a large non-stick skillet with non-stick cooking spray. Add zucchini, carrots, and red peppers. Cook over medium heat for about four minutes. Stir often. Add shrimp, onions, and sauce. Increase heat to medium high.
Cook and stir until mixture is hot and bubbly, and shrimp is cook through, (about 3-4 mins). Add linguini to skillet and mix well. Remove from heat and serve immediately. YUMMY!
....AND VERY FILLING FOR ONE PERSON!
