1 can chicken broth1/2 boneless skinless chicken breast1 can corn, drained1 can stewed tomatoes (I used the ones with green chili's)4 TBS fresh grated ginger root. 1 TBS fresh rosemary1 clove of garlic1/4 cup onionOptional veggiescabbageonionmushroomscarrotsceleryradishzucchinibean sprouts any veggie that you like.
Into a pot add chicken broth, chicken breast cut up into bite sized pieces, drained corn, stewed tomatoes with the juice, the grated ginger root, rosemary, crushed garlic, salt, pepper, smoked paprika, and onion. Bring to a boil and then let it simmer while you are cutting up the optional veggies you like. Once the veggies are ready bring the soup up to a boil.
Split the prepared raw optional veggies between two large bowls, add 2 TBS of sour cream if desired and pour/spoon half of the soup into each bowl. Enjoy!
