2 links Italian sausage2 large eggs1/2 cup liquid egg product1 small onion chopped1 cup bell pepper chopped1 cup mushrooms sliced2 cups zuccini shredded1/4 cup parmesan cheesesalt & pepper to taste
saute Italian sausage, casing remove, break up in pan.
remove as much of the fat as you can with paper towels.
add veggies, saute to lightly soften.
in a 9 x 12 pan or similar, spray with cooking spray, add sausage and veggie mix, spreading evenly. Season as desired.
beat eggs and egg product together until fluffy.
gently pour over sausage mixture. Sprinkle with parmesan, then bake for 35 minutes @ 350 degrees, or until firm. serve hot or chilled.
