Slow Cooker Sweet Potato-Chipotle Chili

2 sweet potatoes, peeled & cut into 2" chunks1 large onion, diced2 garlic cloves, minced1 15-oz can red kidney beans1 large red bell pepper, seeded and chopped1 14.5 oz can diced tomatoes1 Tbsp chili powder1 Tsp smoked paprika1 Tsp chipotle chili powder (or 1-2 chipotle peppers in adobo, chopped --- in a can in the Mexican food section)1/2 Tsp kosher salt1 cup water1/2 cup orange juice
Add all ingredients to a slow cooker. Cook on LOW for 6-8 hours or until sweet potatoes become tender. Note: adding chopped chipotle pepper in adobo will add quite a bit of spice. Use low-sodium canned ingredients and omit salt to reduce sodium, if desired. Top with a dollop of nonfat plain yogurt to add a little protein and help balance the spice with something cool (not included in nutritional info).
