Crêpes - French thin pancakes

Ingredients
Directions
3 large eggs2/3 cup cold milk (whole or 2%)1 cup all purpose white flour 2/3 cup cold water1/4 tsp salt1.5 Tbsp melted butter
Mix all ingredients together with an immersion blender or in a food processor. Place in the refrigerator to rest for 45 minutes. This allows the flour time to absorb the liquid ingredients. Once the batter has rested, warm a nonstick 10" frying pan over medium high heat. The pan is ready when water droplets dance in the pan. Spray pan with cooking spray.
At this point whisk batter to redistribute ingredients evenly.
Using a small pitcher, pour some batter in the pan. Quickly turn the pan so that the batter coats the bottom of the pan. The 'pancake' should be very thin. Allow to cook for 1 minute or so and then flip. Keep in a warm oven while cooking the others.
These can be filled with fresh fruit, jam or a bit of butter spray and splenda for a sweet treat. Or you can use spinach or sautéed mushrooms to make it a savory dish.
Makes 10 crêpes. One serving = 2 delicious crêpes.
