Bulgur stuffing for peppers

Ingredients

* Scallions, raw, 1/2 cup, chopped * Garlic, 1 large or 2 small cloves * Olive Oil, 1 tbsp * Bulgur, dry, 3/4 cup * Crushed Tomatoes, 28 oz can * Spinach, frozen, 16oz bag * Ground Turkey, Jennie-o 85/15, 20 oz
Preheat oven to 350 degrees.
Heat oil in deep skillet, add garlic and scallions to lightly brown stirring often.
Remove from heat, add bulgur to lightly toast.
Let the pan cool slightly and slowly stir in canned tomatoes. Cover and simmer for 10 minutes.
Stir in frozen spinach and cook 5 minutes more before removing from heat.
Mix in raw ground turkey then fill peppers (grape leaves, cabbage, zucchini, or whatever you are stuffing).
To use as a meal or side dish, continue cooking for an additional 10 minutes to cook turkey.
Makes about 10 cups
