Sweet 'n' Spicy Roasted Tomato and Red Pepper Soup

Ingredients
4 whole beefsteak tomatoes, chopped2 medium red bell peppers, chopped1 large sweet onion, chopped1 jalapeno pepper, seeded and chopped4 cloves garlic, minced3 tbsp olive oil1/4 cup brown sugarsalt, pepper, and seasonings to taste
Directions
Preheat oven to 400 degrees. Toss all ingredients in an oven-safe casserole dish. Roast in 400-degree oven for 1 hour, stirring occasionally.

Pour roasted ingredients and juice into a saucepan and bring to a boil. Simmer to reduce juices. Remove from heat and blend using an immersion blender. Serve.
