Simple Ratatouille

1 sweet onion, chopped1 red or yellow bell pepper, cored, seeded, and chopped into pieces2 cups sliced zucchini3 cloves garlic, crushed2 tsp olive oil1/3 cup sun dried tomatoes (not oil packed)1/2 cup chicken broth2 cups canned diced tomatoes1 tbsp fresh thyme1 tbsp fresh oregano1/2 tsp sea salt1/2 tsp ground black pepper
Place the sun dried tomatoes and the chicken broth in a microwave safe bowl for 2 minutes on a medium power setting, and set aside.
Place the oil in a pan over medium hight heat. When it is hot add the onion and sauté for three minutes. Add the bell pepper and garlic and sauté an additional three minutes. Add the zucchini and sauté an additional five minutes. Add the sun dried tomatoes and chicken broth, diced tomatoes, thyme, oregano, salt, and pepper and simmer for 20 minutes.
