Chorizo Black Bean Chili

10 oz. Beef Chorizo1 Green Peppers (bell peppers), choppedBeans, black, 3.75 cup (I use 30 ounces of fresh after soaking)2 cans Diced Tomatoes & Green Chilies - Rotel2 cloves Garlic1 tbsp Chili powder1 tsp Cumin1 tsp Oregano1/4 tsp Red Pepper2 cups Chicken Broth or Bouillon
If you are using fresh or dried beans, prepare them per directions (you will want to cook them after soaking, to soften them prior to making this dish).
Add chorizo and peppers to a pot. Cook until peppers are tender. Add rest of ingredients. Bring to a boil. Reduce to a simmer and cook for 20-30 min or until desired consistency.
Makes 8 2-cup servings.
