Introduction

Number of Servings: 8

Ingredients

    1 LB extra lean ground beef
    1 can black beans (drained)
    1 can pinto beans (drained)
    1 can 98% Fat Free Cream of Mushroom Soup
    1 pkg taco seasoning mix
    2 cups lettuce (shredded)
    4 roma tomato (diced)
    4 oz cheddar cheese (shredded)
    1 bag baked tortilla chips (crushed)
    1 cup salsa
    1 can corn (drained)

Directions

Brown ground beef, drain. Add all ingrdients to beef, except cheese, lettuce, tomato, and chips. Remove from heat and add crushed tortilla chips. Stir until all chips are moist. Pour into casserole dish and bake for 30 min @ 375'. Top with cheddar cheese. Allow cheese to melt. Serve topped with shredded lettuce and tomato. Delicious!

    oh my god this was amazing! I added a can of green chilies to make it super extra spicy and it was fabulous! I'm going to have to use some hardcore will power to keep myself away from the pan! This was a filling meal for sure! and low enough in calories that I can have dessert too :) - 11/11/09

    This recipe is awesome...I know because my husband approved. I didn't have the beans so I used a 1/4 cup of refried beans to mix in but it was still great! Thanks for sharing this recipe and I hope others try it too! - 11/20/09
