We just had this for dinner. It is sooo good. We definitely will have this again. Hubby loved it. The only changes I made were left out the pinto beans and used reduced sodium everything and only added 1/2 bag of tortilla chips. Excellent recipe.
This was awesome! Super easy to put together and didn't take long to make at all. Like some of the others, I served with a tblspn of fat free sour cream and piled on the lettuce and tomato. I froze the rest into individual portions for quick and easy lunches and dinners.
I am so very impressed with this meal! I omitted the corn but it was still delicious. I served mine with a little bit of fat free sour cream as well. Delicious!
oh my god this was amazing! I added a can of green chilies to make it super extra spicy and it was fabulous! I'm going to have to use some hardcore will power to keep myself away from the pan! This was a filling meal for sure! and low enough in calories that I can have dessert too :)
Finally! Mexican food I can enjoy with no guilt! I piled on the lettuce and tomato and served with a dallop of fat free sour cream...Fabulous!
