Sneaky Chef Hi-Fi Fish Sticks

1lb of tilapia filet, cut into 1" wide pieces1c whole wheat flour1tsp salt2 lg eggs1/2c white puree (2c steamed cauliflower and 1 medium raw zucchini, pureed in food processor with 1tsp lemon juice and enough water to make smooth, about 4tbsp)1c wheat germ1c bread crumbs4tbsp olive oil
In first shallow bowl, mix flour and salt. In second shallow bowl, combine eggs and white puree. In third shallow bowl, combine wheat germ and bread crumbs.
Heat oil in pan over medium to medium-high heat so that it is hot but not smoking.
Dredge fish pieces first in flour, then in egg mixture, then in breading and lay in pan. Allow to cook 2-3 minutes, then flip and cook an additional 2-3 minutes or until done.
Makes 6 servings.
