Shaved Vegetable Salad

Ingredients
Any seasonal or favoured vegetables or fruit will work for this simple salad. Some examples include:Kohlrabi, radishes, carrots, zucchini, fennel, celery, apples, asian pears, snow peas, asparagus, beets.
Directions
Simply shave chosen fruit/vegetables thinly with a mandolin or chef's knife, and immediately toss with 2 tbsp lemon juice to prevent browning.

Serve with favourite dressing, or simply olive oil and balsamic vinegar with a pinch of salt and freshly ground pepper. For added creaminess, combine with creme fraiche, or for a lower-fat version, Greek yogurt.
