Garbanzo Bean and Tuna Salad with Lemon

Ingredients
3 tablespoons low-fat mayonnaise1 1/2 tablespoons Dijon mustard (not regular or brown)1 teaspoon grated lemon peel2 6-ounce can solid white tuna in spring water, drained2 tablespoons fresh lemon juice1 15- to 16-ounce can garbanzo beans (chickpeas), rinsed, drained1/2 cup chopped sweet onion (i.e. vidalia - cut in 1/2 if using regular onions)1 Tbsp capers1/2 cup chopped fresh Italian parsley
Directions
Whisk together mayonnaise, mustard, lemon juice and lemon peel. In a separate bowl, combine tuna, garbonzo beans, chopped onion, capers and parsley. Add dressing to tuna mixture and mix well. Serve over a bed of greens for a light lunch or healthy afternoon snack.

    I tweaked this one quite a bit! I left out the onion (b/c I didnt have one!) and put all the ingredients in a blender and ate it with multi-grain saltine crackers! Quite good. - 3/22/08

    Loved the garbonzo bean and lemon idea, but it still needs tweaking. I agree with marcella2007 aboiut the onion. I'd also cut the mustard in 1/2 so it doesn't overpower the other flavors. - 3/24/07
