Vegan Cream of Cauliflower and Rice Soup

Ingredients
1 head cauliflower, cleaned and chopped2 cups water1 vegetable bouillon cube1 cup unsweetened soy milk1 tsp nutmegSea salt and black pepper, to taste1 cup cooked brown rice
Directions
Steam the cauliflower using the 2 cups water for ten minutes. Over medium heat, dump the cauliflower into the water and mash using a potato masher. Add the bouillon cube and stir until dissolved. Stir in the soy milk and season with the nutmeg, salt and pepper. Cover and cook for about 15 minutes. Stir in cooked brown rice and cook until thoroughly warmed.
