Morning Glory Muffins

Ingredients
2 c. grated carrots1/2 c. diced, peeled apple1/2 c. raisins, soaked in hot water1/2 c. ground walnuts or pecans1/2 c. flaked coconut1 c. sugar1/4 c. brown sugar1/2 c. softened butter2 eggs2 tsp. vanilla1 1/3 c. wheat flour1/2 c. bran cereal2 tsp. baking powder1 tsp. cinnamon1/2 tsp. salt
Directions
Combine carrots through coconut and set aside. Beat sugars, butter, eggs and vanilla. Add carrot mixture and mix well. Combine dry ingredients in another bowl. Add sugar mixture and combine until flour is moistened. Bake at 350 degrees for 25-30 minutes. Makes 12 muffins.
