Lemon Garlic Cod Pasta

Ingredients
1-4oz. Cod Fillet1 Cup Raw Spinach Leaves8 Cherry Tomatoes1 Cup Cooked Whole Wheat Angel Hair Pasta 1 tsp Garlic Powder1/4 tsp Salt1/2 tsp Pepper1/2 tsp Basil1/4 Cup Water1/4 Cup White Cooking Wine 1 tsp Lemon Juice
Directions
1. Cook 1 cup of whole wheat angel hair pasta. (That's one cup cooked, approx. 2 oz. uncooked). Drain water.

2. Broil fish for approx. 5 minutes then take out of oven (it will finish cooking in skillet)

3. Mix Garlic Powder, Pepper, Basil, Lemon Juice, Water, Cooking Wine and Lemon Juice into sautee pan. Heat to soft boil then turn down.

4. Cut tomatoes in half and sautee along with spinach and cod in sauce until tender. (I leave the cod whole and baste it in the sauce). Allow to cook approx. 5 minutes--just until veggies are tender and tomatoes are bright red.

5. Pour contents of sauce pan on top of angel hair pasta. Enjoy!!

    Pretty good. Seemed a little too peppery and next time instead of garlic powder we are going to used minced garlic but definitely a quick, easy and healthy recipe. - 4/11/12
