Yvonne's Nacho Salad

Ingredients
2 C cooked Black Beans2 C cooked Brown Rice1 package Yve's veggie meatless meat3 large tomatoes chopped1 4 0unce can Green chile peppers diced1 small onion diced1 green bell pepper diced6 cups shredded romaine lettuceNaturally preferred Tortilla chipsGarden of Eatin red hot blues tortilla chipsDrews all natural smoked tomato dressingCheddar cheese veggie shreds1 avacado2 t minced garlic1 small tomato
Directions
In a large skillet, heat black bean, rice, meatless meat, chopped tomatoes, green chiles, onion and bell pepper.

In a small bowl mash together avacado, garlic and small tomato

On each plate (serves 6), layer as follows:
1/2 serving size of yellow chips and 1/2 serving size blue chips
1 cup shredded romaine
1 T of Drew's Smoked Tomato dressing
1/6th of the bean/rice mixture
1 dollop guacamole
veggie shreds
